Grilled Tuna Melt Sandwiches

Ingredients

  • 2 pieces whole wheat bread
  • 2 tbsps ghee or butter
  • 1 can tuna (small 5-6 oz)
  • 1/4 tsp milk (optional)
  • 2 tbsp mayo (add more for desired creaminess)
  • salt and pepper
  • parsley
  • 1/4 cup mixed vegetables (optional)

Directions

  • In a small mixing bowl, combine all above ingredients well, having the mixed veggies if frozen cooked to room temp. Set aside.
  • Heat sautee pan to medium. Melt ghee or butter at the bottom of the pan.
  • You can butter or put mayo on the bread slices that will touch the pan, this is optional.
  • Spoon mixture onto bread, the sides that will not touch the pan. Grill the sandwiches for about 5 mins then 3 mins, or until desired brown color on each side.
  • Serve with salad, fruit, chips, mashed potatoes or by itself. Enjoy!

Tuna Melt Crackers Recipe

Ingredients

  • 1 package of whole wheat crackers
  • ¼ cup mayonnaise
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon ground black pepper, or to taste
  • 1/2 tsp powdered garlic
  • 1 (12 ounce) can tuna packed in water, drained and lightly flaked
  • 4 teaspoons finely chopped onion
  • 4 teaspoons finely chopped celery
  • 4 teaspoons sweet pickle relish
  • ½ teaspoon chopped parsley
  • ½ teaspoon lemon juice
  • 2 tbsps sharp cheddar cheese shredded

Directions

  • In a small mixing bowl, combine all above ingredients well. Set aside.
  • Place crackers on a plate that is microwavable.
  • Spoon mixture onto crackers. Microwave 20 seconds and repeat until cheddar is melted slightly.
  • Serve to guests or have a light snack for yourself!

Spicy Tuna Apps Recipe

Ingredients

  • 2 small cans chunk light tuna in water, drained
  • 4 tablespoons mayonnaise
  • 2 tablespoons prepared yellow mustard
  • 2½ teaspoons creamy prepared horseradish
  • 2 teaspoons lemon juice
  • 2 teaspoons garlic powder
  • 2 pinches salt
  • 1 sleeve crackers or sliced cucumber

Directions

  1. Mix all ingredients in a bowl. Place on crackers, cucumber or put bowl next to cracker bowl to serve for appetizers. Sprinkle some parsley on top for decoration. Enjoy!

Crab, Shrimp, and Tuna Salad Recipe

Great for keto, this salad can go in lettuce cups, on top of salad, paired with a fruit salad or topped on open faced bread. Also great for meal preps as it makes a great high protein meal (50 grams protein).

  • 1/3 12oz can of tuna
  • 1/3 6oz can of crab meat
  • 5 large shrinp, cooked, peeled and cut in quarters
  • 1/8 cup of celery
  • 1 tbsp mayonnaise
  • Salt and pepper to taste
  • 1/8 tsp Parsley

Cook your shrimp, shell them and cut them into quarters (4 pieces). Chop your celery and add all ingredients together. Mix well and microwave for 30 seconds if you prefer it warm or serve chilled.

Salmon Cakes Recipe, Grandma’s Recipe Reconstructed

Delicious and really easy to make, this is a quick spin on my Grandma’s recipe, salmon loaf. Takes about 15 minutes to assemble and sautee without optional sauce.

Ingredients

  • 1 can salmon or tuna 12 oz or 2 5oz
  • 1 tsp grey poupon or whole ground mustard
  • 1 tsp yellow mustard
  • 1 tbsp panko crumbs (can be removed to make it gluten free or use almond flour)
  • 1 egg
  • 1 tbsp olive oil
  • Dash of salt and pepper to taste

Optional sauce (Grandma Ladwig’s recipe)

  • 1 cup milk
  • 2 tbsps flour
  • 1 tbsp butter
  • 1 tsp yellow mustard
  • 1 tsp ketchup
  • 1/2 tsp salt
  • 1/2 paprika
  • 1 egg

Combine all ingredients and form into patties. Heat a sautee pan with olive oil until the oil pops in the pan, about medium heat (2 to low on gas stoves power burner). Fry in sautee pan on both sides until browned. Should not take long, maybe a minute or two on both sides. Top with lemon butter, or the sauce below, and have paired with a light salad.

Optional sauce instructions

Melt butter in a saucepan at medium heat. Add 2 tablespoons flour and stir constantly to mix well for 1 to 2 minutes. Gradually add 1 cup of milk and stir constantly to make smooth and thick. Turn heat to low. Add mustard, ketchup, salt and paprika. Stir until blended and smooth. At last minute, turn off heat and add one egg. Stir and blend thoroughly. Do not reheat. Serve over salmon cakes or on the side.
